Ingredients of Dum Paneer Roll
- 1 cm cubes 400 grams Paneer
- Yogurt
- 2 tbsp Oil
- 2 Bay leaf
- 2 Green cardamom
- 2 Clove
- 3/4 inch piece Cinnamon
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 3/4 tsp Green chilli paste
- 1/2 cup Onion paste
- 3/4 tsp Cumin powder
- 1 1/2 tbsp Coriander powder
- Black peppercorns crushed 6-8
- Salt to taste
- 3/4 cup Yogurt whisked
- 1/2 cup Fresh cream
- Saffron (kesar) a pinch
- 3/4 tbsp Garam masala
- 2 tbsp Fresh coriander leaves, chopped
- 1/2 tbsp Mint leaves
- Rose petals a few
- 11/2 tbsp Rose water
How to Make Dum Paneer Roll

Heat oil in a pan; add bay leaf, green cardamoms, cloves and cinnamon and sauté till fragrant. Add ginger paste, garlic paste and green chilli paste and mix well. Add browned onion paste and mix.

Stir in one cup of water and cook for two minutes. Add cumin powder, coriander powder, crushed peppercorns and salt and sauté for one minute.

Add yogurt and mix well. Add paneer to the gravy and cook over medium heat. Stir in the fresh cream and the saffr

Transfer the mixture to a mitti ki handi (clay pot). Gently stir in the crushed cardamoms, garam masala powder, coriander and mint leaves, rose petals and rose water.
