This creamy spinach curry is full of immunity boosting vegetables. It is spiced with cumin powder, coriander powder, kashmiri chilli powder and loaded with vegetables like bell pepper, brocolli, mushrooms, sweet potatoes.
Ingredients of Mix Veg In Creamy Spinach Curry
300 Gram Mixed Vegetables
30 gram Butter
1 medium Onion
1 large Tomato
1 inch Ginger
1 tbsp Garlic paste
1/2 tsp Turmeric
to taste Salt
3-4 Green Chillies (chopped)
1/2 tsp kashmiri chilli powder
1/2 tsp Red chilli flakes
60 gms Fresh cream
120 gms Spinach (chopped)
1 tsp Cumin powder
1/2 tsp Coriander powder
1 tsp Chat masala
1 tsp kasuri methi
1 tsp lime juice
How to Make Mix Veg In Creamy Spinach Curry
1.In hot water, boil all the vegetables strain the water and keep aside.
2.Then heat 20 gm butter in a pan, add chopped onions, ginger & garlic. Cook till onion starts changing colour, then add chopped tomatoes and cook till tomatoes are soft.
3.Now add cumin powder, coriander powder, kasuri methi & turmeric and cook for 2 more minutes. Switch off the flame and let it cool slightly. Now grind it to a fine paste.
4.Now in the same pan heat remaining butter, add chopped green chillies and cook for a minute, then add mixed vegetables and the stock in which the vegetables were boiled.
5.Let it boil and then add the prepared paste, roughly chopped spinach leaves and cook on a medium flame till oil separated on the side.
6.Then add chilli powder, chilli flakes, chopped coriander, chaat masala and fresh cream. Cook till the desired creamy consistency.
7.Add lemon juice, mix well and remove from the flame. Serve hot.
