Ingredients of Sauerkraut

  • 2 Kg pale green or white cabbage
  • 6 tbsp flaky sea salt
  • 1 tsp caraway seeds
  • 1 tsp peppercorns

How to Make Sauerkraut

Shred the cabbage thinly in a food processor.

Put the cabbage in a large bowl and add the salt. Mix the salt into the cabbage with your hands. Do this for 5-10 minutes.

Add caraway seeds and peppercorns and mix.

Transfer the mix into a glass jar and cover the cabbage surface with a cling film. Push it and weigh it down by placing a glass into the jar on top of the wrapped cabbage. Do the same for all jars.
5.
Leave the jars in a dark place at a cool room temperature for at least five days.
6.
Stir the cabbage everyday to release any gases that build up as it ferments. If any scum forms, remove it. Rinse the glass on top with boiling water and replace the cling film.
7.
Once ready, refrigerate and enjoy for up to six months.
