How to Make Spicy Singapore Noodles
For the omelette:
1.In a bowl whisk eggs with salt and pepper.
2.In a pan add some oil and spread the egg batter making a thin omelette. Cook from both sides till golden brown.
3.Cut semi-thin strips from this omelette.
4.Top it on the spicy noodles.
For the noodles:
1.In a pan add oil, garlic, chilli and yellow bean paste. Saute.
2.Add chicken. Saute till semi cooked and then add prawns. Saute till cooked. Add a little water in intervals to help cooking the meat.
3.Add cabbage, celery, spring onion greens, salt and pepper. Saute for 1-2 minutes.
4.Add the noodles and toss. Add chilli sauce and soy sauce. Toss.
5.Serve hot topped with omelette strips.
