Ingredients of Spicy Singapore Noodles
- For the omelette:
- 2 eggs
- to taste salt
- to taste pepper
- 1/2 tsp oil
- For the noodles:
- 1 tbsp oil
- 6 garlic cloves, chopped
- 2 chillies, chopped
- 2 tbsp yellow bean paste
- 150 gms chicken breast, sliced
- 150 gms prawns (slivered, deshelled and de-veined)
- water
- 100 gms cabbage, shredded
- 50 gms celery
- spring onion greens, chopped
- to taste salt
- to taste pepper
- 1 bowl noodles, boiled
- 1-2 tbsp chilli sauce
- 1-2 tsp soy sauce
How to Make Spicy Singapore Noodles
HideShow MediaPrepare the omelette:

In a bowl, whisk eggs with salt and pepper.

In a pan, add some oil and spread the egg batter making a thin omelette. Cook from both sides till golden brown.

Cut semi-thin strips from this omelette. Top it on the spicy noodles.
Prepare the noodles:
1.
In a pan add oil, garlic, chilli and yellow bean paste. Saute.
2.
Add chicken. Saute till semi cooked and then add prawns. Saute till cooked. Add a little water in intervals to help cooking the meat.
3.
Add cabbage, celery, spring onion greens, salt and pepper. Saute for 1-2 minutes.
4.
Add the noodles and toss. Add chilli sauce and soy sauce. Toss.
5.
Serve hot topped with omelette strips.
