How to make Chicken Yakhni Biryani

Long-grain Basmati rice teams up with the juicy and succulent chicken pieces and whole spices to make this authentic Yakhni Biryani.

Ingredients of Yakhni Biryani

  • 250 gms Chicken Pieces
  • 1 cup Rice
  • 1-2 small Onion Slices
  • 2-3 tbsp Yogurt
  • 2 tbsp Ghee
  • 1 tbsp Ginger Garlic Paste
  • 4 Green Cardamom
  • 2 Black Cardamom
  • 1 Star Anise
  • 2 Bay Leaf
  • 1 tsp Cumin Seeds
  • 1 Inch Cinnamon
  • 2 tbsp Tomato Puree
  • 2-3 Green Chillies (Slit)
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Garam Masala

How to Make Yakhni Biryani

Heat oil/ghee in a pan and add onion slices. Then, add whole spices and fry it for a minute on medium-low flame.

Then, add chicken pieces and stir until it changes its colour. Now add ginger garlic paste, dry masalas (mentioned in ingredients list), yogurt, tomato puree, mix them well and stir constantly till oil separates.

Add 1 cup water bring to boil now cover the lid and allow to cook it on medium-low flame for about 30 minutes.

Now add drained rice and green chilies stir it and taste the salt at this stage you can adjust it. (add water if required).

Cover the lid and let it cook for 5-8 minutes on the high-medium flame.

After 5-6 minutes remove the lid and sprinkle some drops of food color and biryani essence (optional). Simmer it for 10 minutes.
7.
Serve with salan and raita and enjoy!
