Jakhiya Aloo is a traditional potato preparation from the Kumaon region of Uttarakhand. It was recently featured on a special Himalayan menu curated for a state banquet hosted at Rashtrapati Bhavan for EU leaders.
The food in all the regions of Uttarakhand (Uttaranchal) remains simple, basic fare. Whatever is locally grown is consumed, which are now being deemed as superfoods.
With its roots in the hills of Uttarakhand, this raita defines the food culture of the people of Kumaon.
