In a pan boil water and butter.
Once the butter melts, stir in the flour.
Now beat in the eggs.
Add cheese, seasoning and spice.
Spoon into buttered, ovenproof dishes leaving the center empty.
For the sauce:
Heat oil, stir in spring onion and garlic. Cook for 2 minutes.
Now add the tomatoes. Simmer for 15 minutes.
Add sauteed mushrooms and seasoning. Cool.
Spoon the sauce into center of the pastry.
Garnish with cheese.
Bake at 190 degrees C for 20 minutes till golden in colour.
Serve garnished with herbs.
