Quick rice dish like khichdi or pulao can be made easily when nothing else comes to mind or there's no time to make something extensive. For Goan households, it is chorizo pulao. The rice meal dates back to centuries ago, and it has been a staple meal for generations after generations. If you are wondering what is chorizo, it is a name given to Goa-special pork sausages that are strung together with a thread and are purchased in bulk by the people there.

Here's a fun fact about chorizo you should know. If your refrigerator is always stocked with paneer brick for any time cooking, people in Goa make sure to have Goan pork sausages at home at all times. That's because it's not just pulao that you can make with these sausages, there's much more you can do with the flavorful ground pork that is pre-cooked with a range of spices. Chorizo is already full or flavours so even if you don't add much to your meal, it will still taste good.

Ground pork sausage



Goan Chorizo Pulao Recipe:
 

Ingredients:

1 cup rice, soaked in water
10 Goan Sausages
2 onions, sliced or chopped
2 tomatoes, chopped
2 green chillies
1tbsp ginger-garlic paste
2-3 green cardamom
1-inch piece of cinnamon
4-5 Cloves
2 Bay leaves
6-7 black peppercorns
1 boiled potato, cubed
Salt to taste
Red chilli powder to taste
Juice of half a lemon

Method:

Step 1 - Heat ghee/oil in a pan and roast all whole spices - cinnamon, bay leaf, cloves, black peppercorns and cardamoms.

Step 2 - Saute onions with ginger garlic paste and green chillies. Add tomatoes and cook till mushy.

Step 3 - Add cubes boiled potato and saute for 2 minutes. Add salt and red chilli powder.

Step 4 - Add sausages and cook for about 5 minutes while stirring in between.

Step 5 - Add soaked rice, add enough water to let the rice cook for 10-15 minutes.

Step 6 - Sprinkle lemon juice and serve the pulao hot.

Remember not to chop sausages and toss them in the pan as whole pieces. The trick is to cut them while eating because it is believed that they taste best when cooked whole. Do give this amazing Goan recipe a try.
