Chicken legs cooked with spicy pork sausage and served with beans and wasabi mayo dressing on the side.

Ingredients of Chicken with Chorizo

  • For Chicken Legs with Chorizo:
  • 2 chicken legs (whole)
  • 20 slices of chorizo
  • 2 onions
  • 2 parboiled potatoes
  • 1 red chilly
  • 50 gms butter
  • Salt and pepper
  • 1 cup cherry tomatoes
  • 1 bunch rosemary
  • 1 bunch thyme
  • 1 bulb of garlic
  • Olive oil
  • For Garlicy Cheesy Beans:
  • 200 gms french beans
  • 1 clove garlic
  • Olive oil
  • Salt and pepper
  • Handful of parmesan cheese, grated
  • Preheat the oven to 200 degrees C.
  • For Wasabi Mayo Dressing:
  • 3 Tbsp mayonnaise
  • 1 Tbsp wasabi paste

How to Make Chicken with Chorizo

  • For Chicken Legs with Chorizo:
  • 1.Preheat the oven at 200 degrees.
  • 2.Place the chicken legs in a baking tray.
  • 3.Peel and cut the onions and potatoes into quarters and arrange them in a shallow baking tray with the chicken legs and the vegetables.
  • 4.Stack the Chorizo slices together to make bundle and arrange them in the baking tray.
  • 5.Add in one sliced red chilly.
  • 6.Rub the butter the chicken legs.
  • 7.Squash the bulb of garlic and Scatter it over the chicken and season with salt and pepper.
  • 8.Scatter cherry tomatoes, rosemary and thyme in the baking tray and drizzle with generous amount of olive oil.
  • 9.Pop the baking tray into the preheated oven for 45 minutes.
  • For garlicky cheesy beans:
  • 1.Steam the beans with a pinch of salt in boiling water for 2-3 minutes. Drain in cold water and set aside.
  • 2.In a shallow oven proof pan, spread the beans and slices of garlic and drizzle with olive oil.
  • 3.Season with salt and pepper and add grated Parmesan and put it in the oven at 200 degrees for 10 minutes.
  • For wasabi mayo dressing:
  • 1.Put the ingredients in a small mixing bowl and whisk together.
  • 2.Serve the chicken legs with beans and wasabi mayo dressing on the side.
