The Portuguese traders introduced India to this wonderful tuber and the rest as they say is history. There are so many mind-boggling ways in which you can use potatoes. We have to admit that we have a special bias for the quick and yummy potato snacks. Potato is perhaps one of the easiest vegetables to work with, and this aloo papdi or mathri recipe is proof.

This recipe by vlogger and YouTuber Parul was posted on the YouTube channel 'Cook With Parul'. This aloo papdi is an ideal companion for your evening cuppa. You can also top it with sev, dahi, chopped, tomatoes, onions, coriander and sonth chutney and build your own DIY chaat. For the crispy papdi, all you need to do is make a batter of maida, sooji, besan, salt, ajwain, red chilli flakes, pasta seasoning (optional). Mix the dry ingredients with oil. The add the grated potatoes, mix until you get a nice dough. Rest it for five minutes. Roll out the dough in small round circles. Do not roll them too thin or keep it too thick. Fry it and your papdi or mathri is ready!
