Parmesan cheese is made from raw cow's milk. It is a hard granulated cheese that is cooked but not pressed. Parmesan cheese has a fruity nutty taste. The cheese is made only from those cows that are fed only on grass or hay. It is said to have originated in Italy. The only additive that is allowed in parmesan cheese is salt, which is absorbed by the cheese during the first 20 days of curing.
Usage
Parmesan cheese is usually grated over pasta, spaghetti and also stirred in soups and stews. Unlike other cheese varieties, parmesan cheese can simply be roasted and eaten as a snack.
Nutritional Value
It is a good source of calcium and phosphorous and is therefore good for healthy bones. It is comparatively low in calories and has a good taste so that a little amount of it can be added. This makes parmesan cheese a very good addition in the diet for people watching their weight. It is also low in lactose and so many people who are mildly lactose intolerant prefer this variety of cheese.
