Ingredients of Asparagus with Creamy Mushrooms
- 250 gm thin asparagus
- 10-12 peeled water chestnuts
- 2 Tbsp oil
- 1 tsp grated ginger
- 3 Tbsp chopped spring onions
- 1/2 Tbsp soya sauce
- 1-2 Tbsp water
- Salt and pepper
- 250 gm mushrooms
- 2 tsp butter
- 2 Tbsp cream
- 100 ml milk
- Chopped herbs to garnish

Cut the asparagus into 1" pieces. Slice water chestnuts.
Heat oil and fry ginger and spring onions for 1 minute.
Add asparagus and water chestnuts. Stir Fry for 2 minutes.
Add soya sauce, water and seasoning. Cook for 3-4 minutes until asparagus is tender.
Place the mushrooms in an ovenproof dish/pan.
Place a dot of butter inside each cap. Pour on the milk and cream. Season.
Seal on the lid and cook on a gentle flame for about 8 minutes.
Serve with the asparagus and bread croutons.
