Ingredients of Aubergine and Walnut Dip

  • 1 large roasted aubergine 200 gm chopped walnut 1 tbsp red chilli sauce 1 tbsp garlic paste 1 tbsp roasted fennel seeds 2 tbsp salad/olive oil 1 tsp lemon/sweet lime rind 1 tbsp ginger paste salt and pepper to taste

Roast one large aubergine and scoop out the flesh. Put the aubergine flesh, garlic paste, ginger paste, chopped walnuts, roasted fennel seeds, salt, pepper and lemon/sweet lime rind in a mixer. Blend into a smooth paste. Add chilli sauce and salad/olive oil by degrees. Re-season with salt and pepper. Garnish with chopped parsley. Serve chilled with crunchy cut vegetables.
