Ingredients of Hare Masala Da Champ

  • 8 Mutton chops (rib chops)
  • 1 tbsp oil
  • 1 medium onion, sliced
  • 3 tbsp curd
  • 1/2 Lemon (juiced)
  • 1 tsp butter
  • For the marinade:
  • 15 Peppercorns
  • 1 cinnamon stick
  • 2 tsp coriander seeds
  • 2 tsp cumin
  • 3 Garlic cloves
  • 1 Green chilli
  • Handful of mint leaves
  • Handful of coriander leaves
  • 1 tsp malt vinegar
  • 2 tsp sugar
  • 1 tsp turmeric
  • A pinch of red chilli powder
  • 1 tsp oil
  • 1 tsp dry mango powder

How to Make Hare Masala Da Champ

Prepare the marinade:

1.
In a pan dry roast peppercorns, cinnamon, coriander seeds and cumin. Shift them in a mortar and pestle.

Add garlic, green chilli, mint leaves, coriander leaves, malt vinegar, sugar, turmeric, red chilli and oil. Grind it into a fine paste.
3.
Add mango powder. Mix well.
4.
Apply this marinade to the mutton chops. Keep aside.

For cooking:

1.
In a sauce pan add oil and pan sear the chops from both sides. Once done keep aside to rest.
2.
In the same pan add sliced onions, saute till golden brown. Add curd to de glaze.
3.
Add the cooked chops back in. Add lemon juice and butter.
4.
Saute till the juices start to absorb.
5.
Serve.
