How to make Idra/ White Dhokla

Idra/Idada or khatta dhokla is a thin fluffy sheet of sweet and tangy deliciousness. It is enjoyed in the same way as a dhokla, and the only difference is in the ingredients used.

Ingredients of Idra/ White Dhokla

  • 3 Cups Rice
  • 1 cup Urad dal
  • 1 cup Flattened Rice
  • 1 tsp Fenugreek
  • 1 tsp Ginger and garlic paste
  • 1 tsp Mustard Seeds
  • 10-15 Curry Leaves
  • 1 tsp Red chilli powder
  • 1 tsp Black pepper powder
  • 1/2 tsp Fruit salt
  • Pinch of Asofetida
  • Salt as required

How to Make Idra/ White Dhokla

In a bowl wash and soak rice, fenugreek and flattened rice for 5-6 hours. In another bowl wash and soak only dal for the same time.

Once soaked properly, make a smooth batter separately.

Mix both the batters in a bowl and let it sit overnight in a warm place.

Once it has fermented overnight, add salt, ginger chilli paste and mix properly.

Ready the dhokla pan by greasing it with some oil.

Just before pouring the batter in the dhokla pan, add the fruit salt, mix well and then pour it on the dhokla pan.

Lightly tap so the batter is evenly distributed, now sprinkle some red chilli powder and black pepper powder on the batter and then let it steam for 20-25 mins.

Once done, take out the idra and let it cool.

While it cools, prepare the tadka. In a pan, heat oil, add mustard seeds and once it starts to crackle add hing and curry leaves. Take off the heat in a minute and pour on the idra evenly.
10.
Cut into square pieces and serve with garlic chutney, dhaniya chutney or a side of your choice.
