Ingredients of Irani Black Zeeresh Qormeh

  • 1 Kg lamb boneless cubes
  • 150 ml olive oil
  • 3 Cinnamon sticks
  • 2 pcs onion, sliced
  • 5 pcs black lemon (soaked in water)
  • 1 tsp ginger-garlic paste
  • to taste salt
  • 1 tsp degi red chilli
  • 1 tsp cinnnamon powder
  • 1 tsp green cardamom powder
  • 250 ml tomato paste
  • 1 tsp black pepper (crushed)
  • 100 gms walnut paste
  • 75 gms black barberry (sauteed in oil)
  • 50 gms apricot almonds, peeled
  • 50 gms pistachio, sliced
  • 1/2 gram Saffron (dissolved)

How to Make Irani Black Zeeresh Qormeh

Take a handi, add 2 tsp olive oil, put on low heat. When oil becomes hot, add cinnamon, sliced onion and then black lemon. Stir well.

Add ginger garlic paste, lamb and salt. Stir vigorously on medium heat. Now add salt, degi chili, cinnamon powder, green cardamom powder and crushed black pepper.

Add tomato puree, stir well and cook. Once masala is cooked properly, add 1 litre water.

Cook it covered by lid, add almond, pistachio, walnut paste and black barberries. Cover it by silver foil to cook in dum. until the lamb cooks.
5.
Now add saffron and cook for 3 more minutes.Garnish with pistachios and almonds before serving.
