Ingredients of Leftover Roti Samosa
- 3-4 leftover chapatis/roti (For wrapping)
- Maida and water paste (For sticking)
- Fresh coriander leaves
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/4 tsp asafoetida (Hing)
- Half tsp grated ginger
- 1 green chilli, chopped
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- 2-3 boiled potatoes
- Salt as per taste

Let’s begin with preparing filling. Just heat a pan and add oil, cumin seeds, coriander powder, asafetida, ginger, green chilis, turmeric powder, red chili powder, coriander leaves and mix them well.

Add roughly chopped boiled potatoes and mix it with spices. Nicely mash the potatoes and keep the filling aside to cool down.

Cut the leftover rotis in half.

Take one half of roti and apply the maida and water paste at the sides to stick. Press it from the ends and shape it like a cone.

Add the filling in the cone and apply the maida paste at end to seal the samosa.

Fry it until the samosas are golden brown and crusty.
7.
Serve them hot with chutney and chai.
