60 gms brown sugar
15 gms caster sugar
20 gms honey
102 gms T-45 flour
3.5 gms baking powder
55 gms butter, melted
20 gms milk
2 gms lemon zest
How to Make Madeleines
1.Whip eggs, sugars, honey and lemon zest until double (ribbon stage),
2.Fold in the melted butter and milk.
3.Fold in the flour and baking powder.
4.Let the batter rest in the refrigerator overnight.
5.Bake at 170 C for 10 minutes, until golden brown.
