Ingredients of Madeleines

  • 1.5 eggs
  • 60 gms brown sugar
  • 15 gms caster sugar
  • 20 gms honey
  • 102 gms T-45 flour
  • 3.5 gms baking powder
  • 55 gms butter, melted
  • 20 gms milk
  • 2 gms lemon zest

How to Make Madeleines

Whip eggs, sugars, honey and lemon zest until double (ribbon stage),
Fold in the melted butter and milk.
Fold in the flour and baking powder.
Let the batter rest in the refrigerator overnight.
Bake at 170 C for 10 minutes, until golden brown.
