About Madeleines Recipe: Baked to crisp perfect, madeleine is a traditional small sponge cake from France. It has a very distinct shell-like shape with a sweet flavour and a tang of lime. While these airy teacakes might look intimidating at first but require some very basic ingredients an minimum of time. Enjoy these with a cup of hot tea in the evening with friends and family.

Ingredients of Madeleines

  • 1.5 eggs
  • 60 gms brown sugar
  • 15 gms caster sugar
  • 20 gms honey
  • 102 gms T-45 flour
  • 3.5 gms baking powder
  • 55 gms butter, melted
  • 20 gms milk
  • 2 gms lemon zest

How to Make Madeleines

  • 1.Whip eggs, sugars, honey and lemon zest until double (ribbon stage),
  • 2.Fold in the melted butter and milk.
  • 3.Fold in the flour and baking powder.
  • 4.Let the batter rest in the refrigerator overnight.
  • 5.Bake at 170 C for 10 minutes, until golden brown.
