Ingredients of Rajasthani Lehsun Ka Halwa (Garlic Halwa)
- 250 gms Garlic
- 250 gram Khoya
- 200 gram Clarified butter
- 2 Litre Milk
- 180 gram Sugar
- 12-15 Strands Saffron (optional)
- 150 gram Chopped mix of dry fruits
- 2 tsp Cardamom powder
- 2 tsp Alum powder /White vinegar
How to Make Rajasthani Lehsun Ka Halwa (Garlic Halwa)

In a deep pan, bring water to a boil. Add the peeled garlic cloves along with ½ teaspoon of alum powder. Boil for 4–5 minutes.

Drain the water and thoroughly rinse both the garlic cloves and the pan. Repeat this boiling and rinsing process 6 to 8 times, or until the strong, pungent aroma of garlic is significantly reduced or completely neutralized.

After the final rinse, allow the garlic to cool slightly. Then grind it into a smooth paste, adding milk gradually to achieve the desired consistency.
Preparation:
1.
Heat clarified butter (ghee) in a heavy-bottomed kadhai. Once the ghee is hot, add the prepared garlic paste.

Cook on a low flame, stirring continuously, until the paste turns golden brown and aromatic.
3.
Gradually add the milk to the pan and continue to cook, stirring frequently, until the mixture begins to thicken.
4.
Add fresh khoya (mawa) to the thickened garlic-milk mixture. Cook further until the mixture deepens in color to a rich, dark brown.
5.
Stir in the sugar and continue cooking for another 6–8 minutes, or until the mixture begins to leave the sides of the pan and the ghee starts to separate.
6.
Add cardamom powder and garnish with almond and pistachio flakes. Mix well to combine all the flavors.
7.
Serve the garlic halwa hot and enjoy its unique, rich flavor.
