Ingredients of Panettone
- 4 Cups all-purpose flour
- 1/2 cup sugar
- 1/2 tsp salt
- ¾ cup cup dry yeast
- 1/2 cup warm milk
- 4 large eggs
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 cup mixed dried fruits (raisins, candied orange peel, etc.)
- 1/4 cup rum or brandy (optional)

Prepare the dough: In a large bowl, combine 1 cup of flour, sugar, salt, and yeast. Add the warm milk and mix until smooth. Cover and let it sit for about 30 minutes until bubbly.

Mix in the eggs and butter: Add the eggs, softened butter, vanilla extract, and lemon zest to the mixture. Gradually add the remaining flour and knead until you have a smooth, elastic dough.

Add the fruits: If using, soak the dried fruits in rum or brandy for about 30 minutes, then drain. Knead the fruits into the dough until evenly distributed.

First rise: Place the dough in a greased bowl, cover, and let it rise in a warm place for about 2 hours, or until doubled in size.

Shape and second rise: Punch down the dough and shape it into a ball. Place it in a panettone mold or a high-sided round baking pan. Cover and let it rise again for about 1 hour.

Bake: Preheat your oven to 350°F (175°C). Bake the panettone for about 40-45 minutes, or until golden brown and a skewer inserted into the centre comes out clean.

Cool and serve: Let the panettone cool completely before slicing. Enjoy it with a cup of coffee or a glass of sweet wine.
