Ingredients of Gulab Kulfi

  • 1 Litre Milk
  • 1 cup Sugar
  • 1/4 cup mixed dry fruits
  • 12-15 cashew (soaked)
  • 2 tbsp Rose syrup
  • 1 tbsp Rose water
  • handful Rose petals

How to Make Gulab Kulfi

Cook 1 liter full cream milk in a pan till it boils. On the other hand, prepare a paste of soaked cashew nuts.

After boiling, reduce the heat and add cashew paste to it while stirring continuously. Remember that the milk should not stick to the pan.

Cook this mixture for 10 minutes, at this stage add finely chopped almonds and pistachios and cook for a few seconds. After a while, add sugar to the mixture as per taste.

Cook the mixture while stirring continuously so that the sugar dissolves completely. After a while, the mixture will start thickening. When the mixture is cooked and reduced to half, turn off the gas. Keep the pan aside and let it cool completely.

When the mixture cools down, add 2 tablespoons of rose syrup, one teaspoon of rose water and some rose petals and mix well. If you want, you can also add a drop of pink food color at this stage.

Now fill the mixture in the moulds and pack it well and keep it in the freezer for 7 to 8 hours. When the kulfi is well frozen, enjoy a delicious kulfi.
