Melons dusted with pepper, chilled and topped with some lemon and mint sorbet.

Ingredients of Melon with Lime and Mint Ice

  • 2 melons - halved, seeds removed
  • Crushed black pepper
  • 450 ml water
  • Pared rind 3 limes
  • 150 gm grain sugar
  • Handful mint leaves
  • Juice of 6 limes
  • For garnish:
  • 1/2 sliced cucumber
  • Mint leaves
  • Fruits, optional

How to Make Melon with Lime and Mint Ice

  • 1.Sprinkle crushed pepper over melon and chill.
  • 2.Add rind to water with sugar.
  • 3.Dissolve over a moderate flame.
  • 4.Boil for 10 minutes.
  • 5.Add mint leaves to hot syrup.
  • 6.Infuse cool, strain liquid.
  • 7.Add lime juice.
  • 8.Freeze until set.
  • 9.Spoon into hollow of melon.
  • 10.Garnish with cucumber, fruits and mint leaves.
