Crisp pastry shell filled with fruits, rum, nutmeg and cinnamon. Baked golden.

Ingredients of Fruit Pie

  • For the pastry:
  • 200 gm flour
  • 100 gm butter
  • 2 egg yolks
  • 3 tbsp cold water
  • Beaten egg, to glaze
  • For the filling:
  • 150 gm raisins
  • 100 gm chopped apples
  • 25 gm blanched almonds
  • 1 Tbsp chopped candied peel
  • 3 Tbsp grated jaggery
  • Grated rind of 1 lime
  • 3 Tbsp rum
  • 1/2 tsp cinnamon powder
  • Pinch of ginger and nutmeg powder
  • 25 gm melted butter
  • 1 sliced banana
  • 100 gm peeled grapes
  • Whipped cream to serve

How to Make Fruit Pie

  • 1.Sieve flour into a bowl. Rub in butter until mixture resembles breadcrumbs.
  • 2.Bind with beaten yolks and water. Knead lightly until dough is smooth.
  • 3.Cover and chill for 30 minutes.
  • 4.Roll out half pastry to line a 6" flan ring. Chill.
  • For the filling:
  • 1.Finely chop all ingredients together except the banana and grapes.
  • 2.Line into prepared flan. Moisten pastry edge with water.
  • 3.Roll out remaining pastry to form a lid. Press over filling.
  • 4.Glaze with beaten egg. Bake at 190 degrees C for 25 minutes until pastry is crisp and golden.
  • 5.Serve warm with whipped cream.
