The classic comfort food - mac and cheese, now with the goodness of mushrooms.

Ingredients of Mushroom Mac and Cheese

  • 1 Tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • Few sprigs of thyme
  • Few sprigs of sage
  • Few sprigs of rosemary
  • 150-200 gms button mushrooms (sliced)
  • Wild mushrooms (optional)
  • 2 Tbsp white wine
  • 1/2 tsp red chilli flakes
  • 1 Tbsp chopped parsley
  • 1 Tbsp butter
  • White sauce:
  • 75 gms flour
  • 75 gms butter
  • 150 ml milk
  • 1 medium onion
  • 2 cloves garlic
  • 1 bay leaf
  • 300 ml cream
  • Salt to taste
  • Pepper to taste
  • 1 pinch nutmeg
  • 30-40 gms grated cheddar cheese
  • 30 gms grated gruyere cheese
  • 30 gms grated parmesan cheese
  • 150 gms macaroni half cooked

How to Make Mushroom Mac and Cheese

  • 1.Heat olive oil and butter in a pan, add onions and garlic give it a good mix.
  • 2.Add chilli flakes to the same pan and cook onions till lightly brown.
  • 3.Add the sliced mushrooms, salt to taste.
  • 4.Deglaze with white wine.
  • For the White Sauce:
  • 1.Infuse the warm milk for sauce with onion, garlic, bay leaf & nutmeg.
  • 2.Strain the milk just before using.
  • 3.In another pan, melt butter & cook the flour till it just begins to change colour.
  • 4.Add the infused milk, butter, cream, grated cheddar cheese and boil till the mix gets nice and
  • 5.thick.
  • 6.Put the pasta in hot boiling salted water until half cooked.
  • 7.Coat the pasta with the mushroom mix & white sauce along with half the grated parmesan and gruyere cheese.
  • 8.Put into a baking dish, top with the remaining parmesan and gruyere cheese, cracked black pepper and a few drops of olive oil.
  • 9.Put into the oven for 15-20 minutes at 180°C.
