Phirni made with rice and milk served in brulee style with a granita of berries and strawberries.

Ingredients of Phirni Brulee with Strawberry Granita

  • For Phirni:
  • 7 Tbsp Rice (broken, crushed)
  • 1 Litre Milk , full cream
  • 1 Cup Sugar grain
  • 4 Tbsp Almonds, peeled
  • 3 Tbsp Condensed milk
  • 1/4 tsp Green cardamom powder
  • For Strawberry Granita:
  • 2 Cups Fresh strawberry, chopped
  • 2 Tbsp Sugar
  • 100 Gram Breakfast sugar
  • 4 tsp Basil fresh, chopped
  • 1 Tbsp Lemon juice
  • 4 Gold varq (optional)

How to Make Phirni Brulee with Strawberry Granita

  • Prepare phirni:
  • 1.Soak rice for 10-15 minutes.
  • 2.Drain and grind to a coarse paste.
  • 3.Bring milk to a boil and add the rice paste.
  • 4.Cook till milk is reduced to half.
  • 5.Add sugar, almonds, condensed milk, green cardamom powder.
  • 6.Cook till the mixture becomes thickish.
  • 7.Set the phirni into desired shape bowls.
  • Prepare granita:
  • 1.Chop strawberries. Cook with 25 gm sugar and without water.
  • 2.Add basil to the mix. Cool down and freeze, overnight if possible.
  • 3.Scrape off with a fork or knife like ice shavings.
  • 4.Sprinkle breakfast sugar on top of phirnee and brulee it with a blow torch.
  • 5.Serve chilled with granita.
