Poha Chicken Bhujing basically involves roasted chicken chunks along with potatoes on charcoal fire and further mixing it with nylon poha (best quality of poha).

Ingredients of Poha Chicken Bhujing
- 2 Cups Poha
- 250-300 gram Boneless Chicken Chunks
- 1 tsp Cumin Powder
- 1 tsp Coriander Powder
- Salt to taste
- 1 tsp Ginger Garlic Paste
- 2-3 Potatoes (Diced)
- 1 tbsp Grated Coconut
- 2 Green Chillies
- 1/2 tsp Turmeric powder
- 1 tsp Red chilli powder
- 1/2 tsp Garam masala powder
- 1 medium Onions (chopped)
- Fresh coriander leaves

Wash the pressed rice under running water and keep it aside.
Take a bowl, add boneless chicken chunks and marinate it with dry ingredients like cumin powder, coriander powder, salt, turmeric powder and more. Then add potatoes and set aside for marination.
Take a grill pan, grease it with some oil and the marinated mixture and let it cook. For charcoal flavour, place a katori with burnt coal in between the cooked chicken and cover it with the lid for 3-4 minutes.
Now, for the poha, heat remaining oil in another non-stick pan. Add onions and sauté till golden brown.
Add the coconut paste, mix and sauté till oil separates. Once done, add remaining turmeric powder, mix and sauté for a few seconds.
Now, add soaked poha and mix well. You may adjust the seasoning and sprinkle some water. Cover and cook on low heat for 2-3 minutes.
Now mix the chicken mixture with poha. Mix everything well! and your delish is ready to relish.
Garnish with coriander leaves and serve hot.
