Ingredients of Roast Chicken Bagelwich

  • For herb chicken:
  • 100 gms Chicken breast (boneless)
  • 1/4 tsp Garlic (peeled, chopped)
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper (crushed)
  • 1/4 tsp Oregano
  • 1 tbsp Refined oil
  • 1/4 tsp Dry thyme
  • 1 tsp Lemon juice
  • 1/2 tsp Parsley leaves (chopped)
  • 1/4 tsp Dijon mustard
  • 1/4 tsp Chilli flakes
  • For Hawaiian slaw:
  • 5 gm Cabbage red julienne
  • 10 gm Cabbage julienne
  • 5 gm Carrot julienne
  • 5 gm Capsicum green julienne
  • 15 gm Mayonnaise
  • 1 gm Salt
  • 1 gm Black pepper (crushed)
  • 10 gm Pineapple julienne
  • For assembly:
  • 2 gm Lettuce lollo rosso
  • 2 gm Lettuce green
  • 2 gm Tomatoes (sliced)
  • 2 gm Onions (sliced)
  • 60 gm Pulled roast chicken and Hawaiian slaw mixture
  • 1 Cheddar cheese slice
  • For spread:
  • 15 gm Aioli
  • For aioli:
  • 100 gm Mayonnaise
  • 2 gm Garlic (chopped)
  • 1 gm Black peppercorns (crushed)
  • 1 ml Lemon juice
  • 0.5 gm Salt

How to Make Roast Chicken Bagelwich

For chicken:

Marinate the chicken breast with oil, chopped garlic, dijon mustard, chopped fresh parsley, oregano, lemon juice, dry thyme, chilli flakes, salt and pepper and let it rest for about an hour in a chiller.

For slaw:

In a clean, add fine julienne red cabbage, carrot, capsicum, cabbage, pineapple and mayonnaise. Mix it well and adjust seasonings.

For aioli:

Add mayonnaise in a bowl, add chopped garlic, lemon juice, crushed black peppercorns and salt. Whisk well and serve.

For bagel filling:

In a clean bowl, add the pulled roasted chicken and a teaspoon of aioli and fold them together. Assemble by toasting the bagels with butter, applying the spread, followed by placing the lettuce, sliced tomatoes and onions.

Add the Hawaiian salad and top it with the roasted chicken and place the cheddar cheese slice and finally the top bagel slice. Enjoy!
