About Rosemary Plum Mousse, Spiced Cumin Cloud Recipe: Ripen plums blended with rosemary, sugar, glucose and salt along with a bit of honey. Charged with whipped cream, this dish of rosemary plum mousse is served topped with a spicy cumin cloud which has a tang of lime and black pepper. A perfect monsoon dish to relish.

Ingredients of Rosemary Plum Mousse, Spiced Cumin Cloud
- For rosemary plum mousse:
- 200 gram Fresh plum
- 20 gram Grain sugar
- 10 gram Liquid glucose
- 30 gram Honey
- A sprig Fresh rosemary
- 150 ml Water
- A pinch of Salt
- 1 Cream charger
- For spiced cumin cloud:
- 10 gram Cumin
- 200 ml Lemon juice
- 300 ml Water
- 10 gram Black pepper
- A pinch of Soy lecithin

Take ripen plums and cut them into half’s and leaving skin on which will add colour to the mousse.

Take a pan and add plums, sugar, liquid glucose, rosemary sprig, water & salt and let it cook untill its tender.

Blend the mixture once it cools down, while blending add honey for more glossy texture.

Strain the mixture and refrigerate the same. Pour the mixture to the cream whipper and charge with one NO2 charger to get desired consistency.

For spiced cumin cloud, add all the ingredients into a bowl, whip the mixture with hand blender to make foam.
6.
Serve Rosemary plum mousse in a glass topped with spiced cumin cloud.
