About Spaghetti Aglio E Olio Recipe: Love infulging in a bowl of cheesy spaghetti? Here is an interesting one to try at home! Laced with parmesan cheese, tangy lemon and a chili dressing on top, this one is a crowd pleaser!

Ingredients of Spaghetti Aglio E Olio

  • For chilli garlic oil:
  • 1/2 cup extra virgin olive oil
  • 3 tbsp red chilli flakes
  • 1 Star anise
  • 1/2 inch cinnamon stick
  • 10 garlic cloves, sliced
  • A pinch of smoked paprika (optional)
  • A pinch of Kashmiri red chilli powder
  • For Aglio-e-Olio:
  • 1/2 cup walnuts or pine nuts (whole), chopped
  • 50 gms spaghetti
  • Water (to boil spaghetti)
  • 4 tbsp parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 4 garlic cloves, sliced
  • 2 tbsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp dried parsley
  • 2 tsp pepper powder
  • 2 tbsp oregano
  • to taste salt

How to Make Spaghetti Aglio E Olio

  • Prepare chilli garlic oil:
  • 1.In a pan add oil and in the cold oil add all other ingredients.
  • 2.Turn the flame on once all the ingredients are added and put it on lowest heat.
  • 3.Let everything infuse on low flame till the garlic turn slightly golden (it took me around 10 minutes).
  • 4.Switch off the flame - cover and let the oil rest till you prepare the spaghetti. Strain the oil before serving
  • Prepare Aglio-e-Olio:
  • 1.In a pan - Dry roast walnuts / pine nuts on low heat and set aside.
  • 2.Boil spaghetti as per packet instructions (since each brand has different cooking time).
  • 3.Just ensure you add a lot of salt and a tsp of oil in the boiling water before adding spaghetti. Do not overcook - switch off the heat before the spaghetti is completely cooked.
  • 4.Save a cup of spaghetti water. Drain the remaining water and set the spaghetti aside - drizzle a tsp of olive oil to avoid it from sticking.
  • 5.In a large pot - heat olive oil + butter - once the butter melts add the garlic.
  • 6.Cook garlic for 15 seconds and then add the spaghetti to it. Add the all remaining ingredients and mix well.
  • 7.Add 4 tbsp pasta water and stir well. Cover and cook for 2 minutes
  • 8.To serve, add the spaghetti in the serving platter and drizzle the chilli oil on it.
  • 9.Grate some fresh Parmesan Cheese and add the toasted walnuts or pine nuts.
