How to make Tesryo Masala
Tesryo or clams are a local favourite. They can be eaten as is, as a starter or even as a dry dish in between meals. This recipe converts the local dish with an international flair using local ingredients by pairing it with peri-peri masala.

Ingredients of Tesryo Masala
- 20ml Refined Oil
- 20gm Onion
- 20gm Garlic
- 150gm Clams
- 60gm Onion Tomato Masala
- 5gm Tesryo Masala
- 40ml Coconut Milk
- 1gm Tumeric
- to taste Salt
- 4gm Coriander
How to Make Tesryo Masala

Blanch the clams in hot water salt and a lemon wedge. Blanch for another 2 minutes and remove.

Now, heat oil in a pan. Add the chopped onion and garlic. Saute well. Add the onion tomato masala and saute.

Add peri-peri powder (5 gms). Add home-made tesryo masala and saute.

Next, add coconut milk, turmeric and salt. Add the clams and cook for 30 seconds.

Top with peri-peri masala. Serve in a deep dish.
6.
Garnish with coriander leaves and serve hot with poi.
