A savory drink with chilli, gin and liqueur.

Ingredients of Thai Mai Shu

  • 40 ml London Dry gin
  • 20 ml apple liqueur
  • 10 ml ginger liqueur
  • 10 ml chilli syrup
  • 3 cm de-seeded chilli
  • 1 cm lemon grass
  • 2 slices ginger
  • 2 basil leaves
  • Garnish: Lemon grass stalk.

How to Make Thai Mai Shu

  • 1.Create 2 chilli - apple spheres using 2.5ml measuring spoon.
  • 2.Cook for 1/2 min and then rinse in water. Place in ceramic spoon.
  • 3.Muddle ginger, chilli and lemongrass and syrup until paste turns red.
  • 4.Add remaining gin, liqueurs and basil.
  • 5.Shake and double strain in glass, and serve on a cocktail plate with spheres.
