Corn and spinach are two super healthy ingredients that can also be made into various kinds of meals; from snacks to sabzis. Corn is a grain that is rich in fibre, vitamins, minerals and antioxidants while spinach is an iron-dense vegetable, rich in vitamins A, C and K, magnesium and manganese. In the recipe, blanched palak, corn boiled in milk and grated, are combined with paneer, potato, cornflour, coriander leaves along with a host of spices and chillies to make a thick dough. Small, round disc-shaped tikkis are made out of the dough which are then pan-fried in oil till golden-brown and crisp. A perfect tea-time snack; serve these tikkis hot along with your choice of dip.
