Ingredients of Atthe Mutton Curry

  • 1/2 Kg Mutton
  • 1/2 cup Ghee
  • 1/2 tsp Asafoetida
  • 1 tsp Cumin Seeds
  • 2-3 Dried red chillies
  • 1-2 Bay leaves
  • 2-3 Green Cardamom
  • 1-2 Black Cardamom
  • Medium Cinnamon Stick
  • 2 Onions Sliced
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Haldi
  • 5-6 Garlic Cloves
  • Medium Ginger Piece
  • 8-10 Black Pepper Corns
  • 2-3 Green Chillies
  • Salt according to taste

How to Make Atthe Mutton Curry

Use low to medium heat throughout the recipe. In an Iron kadhai, add ghee and hing. Add whole spices and cook for a while. Add mutton pieces and cover and cook for 10 minutes.

Add sliced onions and stir and keep cooking until the onions are soft.

Add salt and cover for another 5 minutes. Add haldi and red chilli powder and cook for another 5 minutes.

Make a paste of garlic, ginger, black peppercorns and green chillies. Add it to the mutton at this point.

Mix everything well and keep cooking. Keep stirring every 5 minutes to make sure the masala doesn’t stick.
6.
The mutton will start releasing water, let this water and ghee mix cook together.
7.
Cover and cook the mutton until soft. Sprinkle some water after every 5 minutes when you stir the mutton.
8.
Once done, serve hot with fluffy white rice.
