Ingredients of Rajasthani Mutton

  • 1 Kg Mutton
  • 6-7 Onion
  • 2-3 Tomato
  • 3-4 Tbsp Ginger-Garlic paste
  • 4-5 Green Chilies
  • 4 Black Cardmom
  • 4 Green Cardmom
  • 5-6 Clove
  • 2 Bay Leaf
  • 4 Whole Red Chilies
  • 1 Tbsp Garam Masala
  • 1 Tbsp Red Chili Powder
  • 1 tsp Turmeric
  • 2 Tbsp Coriander Powder
  • 1 Tbsp Jeera Powder
  • To taste Salt
  • A pinch of Nutmeg
  • 3-4 Tbsp Mustard Oil

How to Make Rajasthani Mutton

To make Rajasthani Mutton, first wash the mutton 2 to 3 times with hot water and keep it aside. To make mutton curry, heat a large pan on the gas and heat 3 to 4 tablespoons of mustard oil in it

Add all the whole spices like black cardamoms, black peppercorns, bay leaves and whole red chillies, cloves, green cardamoms and green chillies and fry for a few seconds.

Add chopped onion after some time it becomes translucent add the prepared ginger garlic paste and fry it and it will turn light in color in 5 to 6 minutes. Onion has to be cooked till this stage only.

Add mutton and along with garlic whole bulb. Add a little salt and keep cooking it. When the water starts drying up, add red chillies, cumin powder, coriander powder, Kashmiri red chillies and turmeric powder and cook it stirring continuously.

Mutton often absorbs the flavor of spices only after drying all the water. When the oil separates, put two tomatoes in half and cook while stirring continuously.

Remove the peel of tomato. You have to cook the mutton till the oil separates. Now add some almonds, cashews and raisins here.

Add 2 cups of hot water here. Lastly add garam masala, dry ginger powder and a little nutmeg, these things enhance the flavor of this dish even more.

Now cover the lid and let the mutton cook on low flame for 20 to 25 minutes. In this time your mutton will be fully cooked. Turn off the gas and serve with roti.
