Chili Con Carne is a spicy stew like dish made with keema, bacon and kidney beans (rajma). It is served with rice or tortillas, sour cream and a green salad.

Ingredients of Chili Con Carne
- 500 gms keema
- 4 to 6 rashers bacon
- Half a cup rajma - soaked and boiled
- 2 onions
- 6 pods garlic - ground into paste
- 1 tsp cumin
- 2 bay leaves
- Worcestershire sauce
- 1 cup tomato puree or paste
- 3 cups stock or as desired
- 1 cup red wine or as desired
- 2 pieces dark chocolate
- Olive oil to cook
- Salt and pepper to taste
How to Make Chili Con Carne

Dry fry the bacon and keep aside.

Slice the onions thickly and fry in the bacon fat with some olive oil added. When browned, add the garlic and saute.

Add the keema and fry on high heat until browned.

Add the tomato puree or paste and saute for a few minutes.

Add the cumin and a good splash of Worcestershire sauce. If you want more spice, add some fresh or powdered red chillies.

Add the stock, red wine, salt and pepper and bring to a boil. Then turn the heat down and simmer till almost all the liquid is absorbed. Do not make too dry.

Add the rajma and the dark chocolate and stir over low heat till everything is combined well. Crumble the bacon over.
8.
Serve with rice or tortillas, sour cream and a green salad.
