Doli Ki Roti Recipe: We bring you one such lesser-known story of an interesting bread of India, referred to as ‘doli ki roti’. It is basically a desi-style sourdough bread that finds its origin in the Multan region of West Punjab (now, Pakistan).

Ingredients of Doli Ki Roti

  • For yeast:
  • 1-2 cinnamon sticks
  • 3 green cardamom
  • 1 black cardamom
  • 7-8 cloves
  • 1.5 tbsp saunf (fennel seeds)
  • 1/2 tsp nutmeg powder
  • 2 tsp black pepper
  • 1 tsp dried ginger powder
  • chana dal
  • Water
  • For dough:
  • 1.5 cup atta
  • 1/2 tsp sugar
  • For filling:
  • 2-3 tbsp chana dal, soaked
  • 1 medium sized onion
  • 2-3 green chillies
  • 2 tsp roasted jeera powder
  • Black salt and salt to taste
  • 1 tsp freshly chopped coriander

How to Make Doli Ki Roti

Prepare the yeast:

1.
Grind the masala in a blender.
2.
Boil chana dal in water and add the masalas to it.
3.
Cool down the mixture and let it ferment for 24 hours.
4.
Add some atta, mix and again ferment for 24 hours.

Prepare the dough:

1.
Add the rest of the atta, sugar and salt and prepare a dough.
2.
Cover it with a cheese cloth and let it rest for 2-3 hours.

Prepare the filling:

1.
Meanwhile, boil the soaked chana dal well.

Strain the excess water and mash it coarsely,
3.
Add rest of the ingredients mentioned and prepare a filling

Prepare the roti:

1.
Finally, it’s time to make doli ki roti.
2.
Start by cutting roundels from the dough.
3.
Stuff them with chana dal mix.
4.
Roll these doughs into flat puris.
5.
Deep fry on medium flame.
6.
Serve with aloo curry.
