The French classic with a twist. Duck breast cooked in white wine with bacon and potato balls. Topped with orange zest this version of the classic Duck a L'orange is a must try.

Ingredients of Duck a L'orange

  • For the stock / sauce:
  • 5 Tbsp olive oil
  • 7-8 duck bones
  • 1 cup chopped onions
  • 1 cup chopped carrots
  • Water
  • 1 tsp fresh parsley
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • For the potato balls:
  • 2 potatoes, boiled and mashed
  • 2 eggs, beaten
  • Oil to cook onions and bacon
  • 1 cup chopped onions
  • 1/2 cup chopped bacon
  • Salt to taste
  • Oil for frying
  • For the duck:
  • A 300 gm duck breast
  • Salt
  • Oil
  • 15 ml dry white wine
  • For garnishing:
  • Kafir Lime leaves, rolled and julienne
  • 1 tsp orange zest

How to Make Duck a L'orange

  • For the stock/ sauce:
  • 1.In a pan add 3 tbsp oil and brown the duck bones in it. Let them sizzle.
  • 2.In another pan add 2 Tbsp olive oil, 1 cup chopped carrots, onions. Saute them till brown.
  • 3.Add this to the pan with duck bones. Add water to it to make stock.
  • 4.To this add fresh parsley, oregano and thyme.
  • 5.Let it boil.
  • 6.Once concentrated, strain and keep the concentrate aside.
  • For the potato balls:
  • 1.In another pan add oil, chopped onions, chopped bacon and saute. Drain excess oil.
  • 2.Add this to mashed potatoes and make small round balls from it.
  • 3.Dip it in beaten egg, roll it in Japanese bread crumbs.
  • 4.Deep fry them till light brown. Drain on absorbent paper.
  • For the duck breast:
  • 1.Sprinkle and rub some salt on the duck breast.
  • 2.In a pan add some oil and cook the duck breast till light brown on one side.
  • 3.Flip the meat and add dry white wine to it.
  • 4.Let it cook.
  • 5.Take it out on an absorbent paper and let it rest for a few minutes.
  • 6.Cut into thick slices.
  • Plating up:
  • 1.In a plate place the sliced duck breast. Alongside place the fried potato balls.
  • 2.Pour over the sauce, sprinkle the orange zest and the kafir lime.
  • 3.Serve.
