Potato Chops (From Scratch) Recipe: Potato chops are also known as potato keema chops or potato mince chops. These are stuffed croquette-like snacks consisting of spiced mince enclosed within layers of mashed potatoes, breadcrumbs and egg wash. A variation of this chop is especially popular among Goan communities.

Ingredients of Potato Chops (From Scratch)

  • For the stuffing:
  • 250 gram chicken/ mutton mince
  • ¼ cup Green Peas
  • 1 sprig curry leaves
  • 1 onion, finely chopped
  • 5-6 green chillies, finely chopped
  • 2-inch ginger, finely chopped
  • 6-7 garlic cloves, finely chopped
  • 1 cup coriander leaves, finely chopped
  • ½ cup mint leaves, finely chopped
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 2 tbsp vinegar or 1 tbsp lemon juice
  • Salt to taste
  • 2 tbsp oil
  • For the chops:
  • 1/2 kg potatoes, boiled and mashed
  • 2 eggs
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 2 cups breadcrumbs
  • Oil for pan-frying

Boil and mash the potatoes well. Refrigerate for for some time. Then peel and mash them well. taking care to get rid of any lumps.
Wash and drain the mince completely. Boil it along with the green peas in 1 cup of water on low flame. Stir in between and cook for 15 minutes. Keep aside.
In a kadhai, heat oil and curry leaves as well as the chopped ginger, garlic and green chillies. Saute on low flame for 5 minutes.
Add the chopped onion and saute for 2-3 minutes.
Next, add the boiled mince and green peas. Mix and cook for 5 minutes.
Add 1 tsp salt (or to taste) along with the spice powders listed above. Allow to cook for another 2-3 minutes.
Add the vinegar/ lemon juice. Stir well and finally add in the coriander and mint leaves. Mix and set aside to cool.
Now, take out the mashed potatoes and shape them into hollow cups.
Add 1 tsp of the prepared mince stuffing into each of these potato cups and seal them properly. Coat them in breadcrumbs by rolling and keep all of them ready.
Beat the eggs with salt, pepper and 1 tsp water. Heat the pan with oil for shallow frying.
Now, dip the chops completely into the beaten eggs and place them in the pan. Cook on both sides on a medium flame for around 3-4 minutes. Serve hot with ketchup.
