A festive salad made with asparagus, red radish, onion shoots, rocket leaves and a citrusy dressing.

Ingredients of Easter Salad

  • 7-8 asparagus spears
  • 2 Tbsp vegetable stock
  • 2 tsp butter
  • Salt and pepper to taste
  • Optional:
  • Filo nest for garnish
  • Dressing:
  • 1/2 onion-chopped
  • 3-4 slices oranges
  • 2 Tbsp chopped walnuts
  • 1/4 cup orange juice
  • 2 Tbsp red wine vinegar
  • 1/4 cup olive oil
  • 2 Tbsp chopped parsley
  • 1 Tbsp vegetable stock
  • A pinch of sugar
  • A pinch of salt and pepper
  • Salad:
  • 1/2 cup rocket leaves
  • 1/2 cup watercress
  • 1/2 cup arugula or rocket leaves
  • 1/4 cup onion shoots
  • 1/4 cup chopped red radish

How to Make Easter Salad

  • To prepare the dressing:
  • 1.Take a bowl and mix in onions, oranges and walnuts.
  • 2.Add orange juice, red wine vinegar and olive oil, followed by parsley and seasoning.
  • 3.Finally add the vegetable stock and mix well.
  • For the salad:
  • 1.Take a separate bowl and add in all the greens. Mix well.
  • For the asparagus:
  • 1.Heat vegetable stock in a pan and melt butter in it.
  • 2.Season with salt and pepper and add the asparagus.
  • To serve:
  • 1.Place the warm asparagus on the plate and fill the filo nest with the lettuce mix.
  • 2.Pour over the orange dressing
  • 3.And serve.
