A festive salad made with asparagus, red radish, onion shoots, rocket leaves and a citrusy dressing.

Ingredients of Easter Salad

  • 7-8 asparagus spears
  • 2 Tbsp vegetable stock
  • 2 tsp butter
  • Salt and pepper to taste
  • Optional:
  • Filo nest for garnish
  • Dressing:
  • 1/2 onion-chopped
  • 3-4 slices oranges
  • 2 Tbsp chopped walnuts
  • 1/4 cup orange juice
  • 2 Tbsp red wine vinegar
  • 1/4 cup olive oil
  • 2 Tbsp chopped parsley
  • 1 Tbsp vegetable stock
  • A pinch of sugar
  • A pinch of salt and pepper
  • Salad:
  • 1/2 cup rocket leaves
  • 1/2 cup watercress
  • 1/2 cup arugula or rocket leaves
  • 1/4 cup onion shoots
  • 1/4 cup chopped red radish

How to Make Easter Salad

To prepare the dressing:

1.
Take a bowl and mix in onions, oranges and walnuts.
2.
Add orange juice, red wine vinegar and olive oil, followed by parsley and seasoning.
3.
Finally add the vegetable stock and mix well.

For the salad:

1.
Take a separate bowl and add in all the greens. Mix well.

For the asparagus:

1.
Heat vegetable stock in a pan and melt butter in it.
2.
Season with salt and pepper and add the asparagus.

To serve:

1.
Place the warm asparagus on the plate and fill the filo nest with the lettuce mix.
2.
Pour over the orange dressing
3.
And serve.
