About Hath Maluwa Recipe: Hath Maluwa or the seven vegetable curry is a healthy, traditional Sri Lankan dish that is packed with flavourful authentic spices and is most popularly served during the Sri Lankan new year.The term Maluwa means 'curry' in Sinhala and Hath refers to 'seven' that eventually stands fort he seven vegetables used in making this dish. Perfect to serve with milk rice.
Ingredients of Hath Maluwa
200 gms cashew nuts (raws unroasted)
50 gms egg plant
50 gms jackfruit seeds
50 gms runner beans
50 gms sweet potato
50 gms pumpkin
50 gms ratala (baby potatoes)
50 gms ash plantain
50 gms carrot
1/2 tsp turmeric
1 tsp chilli powder (unroasted)
1 tbsp thuna paha (local spice mix, unroasted)
Salt
20 gms red onions
20 gms green chilli
10 gms curry leaves
1 cup coconut milk (thick cream and diluted)
1 cup water
How to Make Hath Maluwa
1.Clean and wash the cashew nuts and soak for few hours and chop the peeled jack seeds and keep aside.
2.Cut eggplant, runner beans, sweet potatoes, pumpkin, ratala, ash plantain and carrot into dices.
3.Add onions, garlic, green chilli in a clay pot and add water along with all the spices. Once you add the spices add soaked cashew nuts and jack seeds, cook for a few minutes.
4.Now add log beans, pumpkin, ash plantains with first extract of coconut milk and cook until done.
5.Once the vegetables are cooked, smash the jack seeds by a spoon and mix well.
6.Mustard seeds can be added as per your choice,
