Ingredients of Imarti Flan With Fresh Fruit
150 gms split black gram skinless (dhuli urad dal)
40 gms rice
edible orange red color
750 gms sugar
5 gms saffron
5 gms rose essence
1 tsp green cardamom powder
For custard cream:
75 gms whipping cream
20 gms custard powder
200 ml milk
40 gms sugar
How to Make Imarti Flan With Fresh Fruit
1.Soak dal and rice together for 60 minutes.
2.Drain and grind with the color to a soft, spongy mixture with a coarse texture.
3.Boil sugar with 3 cups of water till a syrup of single-thread consistency is reached.
4.Remove from heat and strain the syrup.
5.Add saffron, rose essence and green cardamom powder. Keep the syrup hot.
6.Heat sufficient olive oil in a shallow flat jalebi kadhai.
7.Take one ladle full of batter in the immirti cloth, hold tightly and press the batter through the hole into the hot oil. Make small batches and deep fry on both the sides till crisp and light golden brown.
8.Drain the hot immirti and dip into the sugar syrup. Let them remain immersed till they have absorbed enough syrup. Drain and place the immirti on a flat plate.
9.Let it stand so as to allow it to come down to room temperature.
10.Top it with custard cream and fresh sliced fruits.
Prepare Custard Cream:
1.Boil milk in a heavy bottom pan.
2.Take off 100 ml of milk and cool.
3.Add custard powder to make a slurry while still warm.
4.Add sugar to boiling milk.
5.Now add custard slurry to the boiling milk.
6.Keep stirring and cook till required consistency is obtained. Keep aside and chill.
7.Whip cream to the stage where it starts to form peaks.
8.Add cream to the chilled custard mix.
