Ingredients of Indian-Style Masala Macaroni

  • 1 Cup macaroni
  • 3 tbsp oil
  • 1/2 tsp cumin seeds
  • 4 garlic cloves, finely chopped
  • 2-3 green chillies , finely chopped
  • 1 Onion, chopped
  • 1 tomato , chopped
  • 1/4 cup carrots (optional), chopped
  • 1/2 cup capsicum (optional), chopped
  • 1/4 cup green peas (optional)
  • 1/4 tsp turmeric
  • 1/2 tsp chilli powder
  • 1/4 tsp garam masala
  • Salt and pepper to taste
  • 2 tbsp tomato or chilli sauce (optional)
  • 1 tsp lemon juice
  • Coriander leaves (for garnish)

How to Make Indian-Style Masala Macaroni

Cook the macaroni, as usual, until al dente. Drain the water, but reserve 1 cup for cooking later. Drizzle some oil over the macaroni and set aside.

In a kadhai or pan, heat oil on medium flame and add cumin seeds, garlic cloves and green chillies

Add the chopped onions and stir-fry until they begin to turn translucent.

Add chopped tomatoes and the remaining veggies of your choice. Mix well.

Lower the heat and add turmeric, chilli powder, garam masala, pepper and salt.

Saute the veggies and spices together. Taste and adjust seasoning as required. Add ketchup and/or chilli sauce accordingly.

Add the cooked macaroni to the spiced veggies and add a bit of the pasta water kept aside earlier. Stir well to combine the ingredients.
8.
Cover the pan with a lid and allow to cook for a minute or two.
9.
Garnish the pasta with lemon juice and chopped coriander. Serve hot.
