Ingredients of Jalebi Caviar
- 1.5 cup all-purpose flour
- 1/4 cup ghee
- 1.5 cup sugar
- 4-5 saffron strands
- 1/2 tsp powdered green cardamom
- 1/4 cup gram flour
- 1/4 pinch baking soda
- 1 cup sunflower oil
- 2.5 cup water

Mix all-purpose flour, gram flour, and soda in a bowl. Add ghee to make a thick batter, incorporating water. Mix well until it achieves a thick yet flowing consistency. Set it aside for 8-10 hours to ferment.

Make the sugar syrup in a pan over medium flame, add sugar and mix until fully dissolved. Add saffron and cardamom powder.

Now, heat oil in a pan over medium flame for deep frying. Using a strainer, sieve the jalebi batter into the hot oil.

Then, you will get tiny small balls of jalebi, resembling caviar. Fry them until they are crispy in texture and golden in colour, then add them to the sugar syrup.

Garnish with chopped nuts and serve with rabdi.
