Jerk chicken is spicy, smokey, and packed with flavours of allspices, chillies, dark soy sauce, Worcestershire sauce, and various other herbs and spices. It makes for a perfect dish when paired with rice and sauteed vegetables.

Ingredients of Jerk Chicken
- Chicken: 1.5kg
- Five spice powder: 10g
- Black pepper: 5g
- Nutmeg: 0.5g
- All spice berries: 5g
- Cinnamon powder: 1g
- White onion: 100g
- Garlic paste: 45g
- Thyme leaves: 5g
- Ancho chilies (seedless, soaked for 1 hour): 10g
- Olive oil: 30ml
- Dark soy sauce: 30g
- Tamarind paste
- Liquid smoke
- Worcestershire sauce
- Ginger juice
- BBQ sauce
How to Make Jerk Chicken

Prepare The Brine:
Mix water, crushed garlic, some allspice berries, some thyme, halved jalapeno, salt, and whole black pepper in a container.

Submerge chicken in the brine for 48 hours in the refrigerator.

First Marination:
Combine spices, onion, garlic, thyme, soaked ancho chilies, olive oil, and dark soy sauce to make a marinade.

Rub marinade over chicken

Final Cooking:
In a bowl, mix tamarind paste, a few dashes of liquid smoke, Worcestershire sauce, ginger juice, and BBQ sauce.

Stir until well combined.

Use this glaze to baste the chicken while cooking to add flavour and moisture.
