How To Make Oi Kimchi
About Oi Kimchi Recipe: Oi Kimchi, or cucumber kimchi is a fresh cucumber salad dish which is perfect for summer season. It is one of the most popular traditional Kimchi in Korean cuisine. If you’re looking for an easy meal with fresh pickle, this should be the pick.

Ingredients of Oi Kimchi
- 1 Kg pickling cucumbers
- 30 gms Korean coarse sea salt
- 70 gms chives (cut into 2 inches)
- 5 spring onions, julienne
- 1 onion, julienne
- 100 gms carrots, julienne
- For seasoning:
- 3 tbsp Gochugaru - Korean red chilli powder
- 2 tbsp sugar
- 2 tbsp garlic (minced)
- 1 tsp Korean salt
- 2 tbsp Asian pear juice
- 1 tsp ginger (minced)
How to Make Oi Kimchi

Cut and remove cucumber ends and then into halves and then further cut each pieces into 4 horizontally.

In a bowl, add the cut cucumbers and sprinkle 3 tbsp of salt and mix cucumbers to coat with salt evenl.

Pickle for 3 hours till cucumbers are shrivelled.

Prepare seasoning - cleaning an chopping chives and spring onion and garlic.

Drain pickled cucumbers in colander for few minutes. *do not rinse the cucumber.*

In a bowl, add cucumber and all the prepared vegetables and the seasoning - red chilli powder, sugar, garlic and salt and mix gently.
7.
Keep the cucumbers at room temperature for 12-36 hours (as per your preference - the longer, the more ripen and sour) and shift into fridge.
