Pav Bruschetta Recipe: Pav Bruschetta combines old favourites like cheese, garlic, tomato, basil and bread in a new and exciting way. When you’re craving bruschetta, but have neither tomatoes nor a baguette, try this recipe. Pav Bruschetta is also a great choice when you want a quick, last-minute starter before pasta or a heavy dinner.

Ingredients of Pav Bruschetta

  • 2 pav
  • 2 Tbsp pasta sauce / any tomato-based dip
  • 2 Tbsp green capsicum, finely chopped
  • 2 Tbsp salami / boiled chicken / paneer, chopped
  • 2 tsp black olives, finely chopped
  • 2 butter
  • 2 garlic cloves, chopped
  • 1 Tbsp olive oil
  • 2 tsp oregano / mixed herbs seasoning
  • 2 tsp chilli flakes
  • 1 tbsp of chopped fresh basil / 2 tsp of dried basil
  • To taste Salt & pepper
  • 2 Tbsp cheese, grated
  • 1 tsp dried rosemary (Optional)
  • 1 tsp dried thyme (Optional)
  • Balsamic vinegar glaze (Optional)

How to Make Pav Bruschetta

Cut each pav into medium-sized, roundish slices which will render 3-4 slices per pav

Heat some butter and roast chopped garlic till lightly brown; Toast the bread on both sides in this garlic-flavoured butter

Apply a generous coat of pasta sauce / any tomato-based dip on the bread slices as prepared above.

In a bowl, add the chopped capsicum, olives, and paneer/chicken. Add the olive oil, oregano / mixed herbs seasoning, paprika, salt, pepper and other herbs if available. Mix well.
5.
Scoop the mix onto the bread slices and spread evenly.
6.
Top the slices with the shredded cheese and then the chopped basil.
7.
Drizzle with balsamic vinegar glaze or sprinkle extra seasoning on top. Serve immediately.
