Goodness of potatoes, corn and soy in this steaming bowl of corn chowder.

Ingredients of Quick Corn Chowder

  • 3 medium potatoes-cut into 1/2" cubes
  • 1 chopped onion
  • 4 cups of water
  • 2 Tbsp soup powder
  • 2 Tbsp chopped parsley
  • Salt to taste
  • 2 tsp freshly crushed pepper
  • 4 cups cream-style corn
  • 2 cups soya milk
  • 3 Tbsp soya bean fine dices
  • 2 Tbsp soyabean oil ( for frying)

How to Make Quick Corn Chowder

  • 1.Put the potatoes, onion, water, soup powder, parsley, salt and pepper together in a medium saucepan.
  • 2.Bring this mixture to a boil, reduce heat and simmer until potatoes are tender.
  • 3.Remove pan from heat and stir in the corn.
  • 4.Put two cups of the mixture into a blender or use a hand held stick blender and briefly puree.
  • 5.Return the pureed mixture to the pot.
  • 6.Stir in the soya milk into the pot and heat through.
  • 7.Garnish with fried soya bean dices and serve.
