How to make roadside kaalan

As the name suggests, this recipe is made by using kaalan (mushrooms) along with cabbage and other aromatic spices. The inclusion of cabbage adds volume and flavour to the recipe.

Ingredients of Roadside Kaalan

  • 1/2 Cup Mushroom
  • 1 cup Cabbage
  • 2 medium Tomato
  • 2 small Chopped onion
  • 1 tsp Red chilli powder
  • 1/2 tsp Garam masala
  • 1/4 cup Grated carrot
  • to taste Salt
  • 1 cup Water for gravy
  • Oil to deep fry
  • 2 tbsp Coriander Leaves
  • 1 tbsp Maida
  • 1 tbsp Corn flour
  • 1/4 tsp Fennel seeds
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Turmeric powder
  • 2 Cloves
  • 1 inch Ginger
  • 2-3 Curry Leaves
  • 2-3 Black Pepper

How to Make Roadside Kaalan

For Pakora

1.
Chop mushroom and slice the cabbage. keep it aside.

Now take a large container and add, maida, corn flour, red chilli powder, salt and turmeric powder. Mix it well and keep it aside for 20-25 minutes.

Heat oil in a kadhai and pour small portion of the mixture into the kadhai and deep fry until golden brown.

For Gravy

1.
Grind tomatoes and curry leaves along with black pepper, cumin seeds, funnel seeds, cloves and ginger.

In a separate pan, add oil and stir fry chopped onions and all the masala powder. Mix well.
3.
Now, add the tomato mixture and add water in it. Give it a good boil.
4.
Put the pakora inside and cover the pan for 5-6 minutes.
5.
Garnish with coriander leaves and enjoy!

Recipe Notes

Do not add water in the pakora mixture.
