This clear mushroom soup is not just light and healthy, it also tastes heavenly. All you need is just a handful of commonly-used ingredients, and you can rustle up a comforting bowl of soup in minutes.

Ingredients of Clear Mushroom Soup
- 200 gms White button mushrooms
- 2 cups White spring onions, sliced
- 1/2 tbsp Sesame Oil
- Garlic, finely chopped
- 1/2 Inch Ginger, chopped
- 1 tsp Finely chopped celery
- 1/2 tsp Crushed black pepper or pepper powder
- 1 tsp or as required Gluten free naturally fermented soy sauce or regular soy sauce
- 5 tbsp Spring onion greens, chopped
- 3 cups Water & Salt as required

Rinse, wipe and slice 200 grams white button mushrooms. Rinse and slice 2 small spring onions. Finely chop 2 to 3 small to medium garlic cloves, 1/2 inch ginger and 1 small celery stem.
Making Clear Mushroom Soup
In a pan heat ½ tablespoon sesame oil and add the chopped garlic and ginger, saute for a few seconds.
Now add the sliced spring onion whites only & saute for a minute. Now add the sliced mushrooms and chopped celery. Stir and saute for two minutes on medium flame.
Now add 3 cups of water & stir, simmer the soup for 4 to 5 minutes on a low flame.
Add 1 teaspoon gluten free naturally fermented soy sauce or regular soy sauce. Adjust preference as per taste.
Now add ½ teaspoon crushed black pepper and salt as per taste. Keep a check on salt as soy sauce already has some salt in it.
Cover with a lid and simmer the soup on a low to medium flame for 15 minutes or till the mushrooms are cooked.
Turn off the flame. Check the taste, make additions if required.
Now add 5 tablespoons of spring onion greens, chopped.
Serve clear mushroom soup hot with toast at the side.
