Ingredients of South Indian-Style Aloo Rasedar

  • 4 potato, boiled
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 2 garlic pods, finely chopped
  • 2 green chillies (slit)
  • 2 Whole red chillies
  • 2-3 sprigs curry leaves
  • 1 tsp mustard seeds
  • 1 tsp jeera
  • Lemon juice (as per taste)
  • 1 tsp turmeric
  • to taste salt and sugar
  • 1 tbsp oil (preferably refined oil or coconut oil)

How to Make South Indian-Style Aloo Rasedar

Heat oil in a pan and add sauté red chilli, mustard seeds and jeera to it and sauté till the seeds crackle.

Add garlic, onion and green chilli and fry till the onion turns translucent in colour.

Add tomatoes, turmeric power and salt and cook till the tomatoes turn soft.

Add the potatoes and mix.

Pour 1 cup water, sugar as per taste and close the lid. Let it cook for few minutes.

Now, open the lid, adjust the salt and sugar and mash some aloo pieces to get a thicker (not dry) consistency.
7.
On low flame, add lemon juice and mix. Switch off the flame and serve hot with crispy puris.
